Armagnac is produced from several grape varieties also associated with Cognac, with the addition of Baco 22A, a variety prized for its distinctive and desirable acidity.
It is worth remembering that the age stated on an Armagnac label refers to the youngest eau-de-vie in the blend. In this case, that means the youngest component has spent at least 40 years ageing.
The spirit is distilled using a column still, allowing continuous distillation, in contrast to the traditional pot-still method associated with its northern cousin, Cognac.
Armagnac comes from the historic region of Gascony, close to the Pyrenees – a land associated with musketeers, rich gastronomy and foie gras.
In the glass, this 40-year-old Armagnac displays a brilliant mahogany hue.
The nose is rich and seductive, filled with aromas of chocolate, coffee and delicate cigar notes. On the palate, it is rounded, precise and wonderfully complex, revealing layers of spiced honey, vanilla and much more.
Every sip seems to offer something different, as the aromas and flavors continuously evolve in the glass.
