The source of good rum is sugarcane. Sugarcane thrives in a warm climate, on fertile soil rich in minerals, conditions quite similar to those of grape cultivation, except for the heat factor, of course.
In the region of expansive sugarcane fields, at the foot of the occasionally erupting San Cristobal volcano, a very modern, family-owned distillery produces selected and pure sugarcane rum, not molasses, presenting a light amber hue (in contrast to the dark hue of the beverage produced from molasses).
It is an aromatic and floral rum, slightly sweet at the beginning, with fresh bread and a hint of spices. During the tasting, it becomes complex, with a full body, notes of papaya and quince, peach peels, and tobacco. A lot of tobacco, a lot of roasted oak, a lot of cigars. A golden rum, implying a 25-year aging process.
