During a fascinating evening at Shaked Brothers, we tasted a selection of exceptional Cognacs. For me, it was also a first introduction to Isabelle Couprie, the house’s Master Distiller – a young woman blessed with an exceptionally refined nose.
Traditionally, Cognac blends are said to be composed according to the aromas of the spirit rather than its taste, without the conventional tasting process normally associated with evaluating fine spirits. At least, that is what they say in the town of Cognac.
The Cognac we tasted offered powerful, clearly defined aromas – almost perfume-like in their intensity – with notes of wildflowers and fresh honey.
Deep amber in color and full-bodied, it reveals underlying nuances of toasted almonds and delicate cigar smoke.
This is a rare Cognac, just as its name suggests. Its 41.2% ABV seems to disappear into a remarkable cloud of aromas and flavors.
Those aromas and flavors continue to evolve throughout the tasting, revealing new dimensions with every sip. Add a teaspoon of water, and the entire experience opens into yet another aromatic world.
