Surprising, perhaps – but it works beautifully. With a spirit of this strength, one might expect an immediate alcoholic attack as soon as it touches the tongue. Adagio Grappa, however, behaves quite differently.
From the very first sip, it engages both the nose and palate with remarkable finesse, offering a complex combination of smooth, almost sweet aromas and flavors. Despite its considerable alcoholic strength, the spirit maintains an unexpected delicacy and natural impression of sweetness.
Adagio is produced from grape pomace derived from Cabernet Sauvignon, Merlot and Pinot Noir. The skins, stems and seeds left behind during winemaking still contain aromatic compounds and hidden flavors, which are captured and transformed through distillation.
Adagio represents an exceptional example of long-aged Italian grappa.
The spirit spends 14 years ageing in Croatian and Slovenian oak barrels, followed by an additional year in chestnut wood casks, which contribute another distinctive layer of aromas and flavors.
Production is carefully controlled and carried out in small quantities using a bain-marie distillation system. Similar in principle to a double boiler used in cooking, the method allows precise control of temperature during the distillation process and encourages a gentler extraction of aromas.
After a total of 15 years of maturation, the result is a powerful yet refined grappa – complex, smooth and surprisingly approachable despite its 48% alcohol content.
A thoroughly enjoyable spirit and an ideal digestif at the end of a fine meal.
