Pérignon – a Benedictine monk who lived from 1638 to 1715 in the Hautvillier monastery in the Champagne region. He is renowned for having discovered the fundamental secrets of the Champagne beverage, credited with creating the first sparkling wine. Despite being partially blind, he crafted the initial blend of red Pinot Noir grapes with white Chardonnay; replaced the cork of those times, made from peeled bark, with a flexible cork; introduced secondary fermentation in the original bottle; and even increased the thickness of the bottle.
Walking the paths once tread by Dom Pérignon along the Avenue de Champagne in the town of Epernay, the Moet & Chandon house was established a few decades ago. It is the world’s largest Champagne house, where the Dom Pérignon brand began operating before becoming an independent Champagne house in the 1990s.

Dom Pérignon Champagne was first produced in 1921 and released for sale in 1936. It surprises anew every year, with the 2008 vintage considered particularly high-quality. The abundant bubbles carry scents that fill the room with notes of green orange peels, baked bread, and even a hint of butter. Beautifully balanced acidity, complex flavors of ripe pears with a touch of mint, and an endless finish.
In December 2020, the new vintage of Dom Pérignon will arrive in the country – the 2010 – one of the most interesting vintages of the 2000s.
