Sylvelune Chaman is produced from grapes grown in Grande Champagne, the premier cru of the Cognac region and a terroir renowned for producing eaux-de-vie of exceptional finesse and ageing potential.
The Cognac is assembled from a number of different eaux-de-vie – the exact number remains a closely guarded secret – matured for varying lengths of time. The final expression is presented as Hors d’Âge, reflecting its emphasis on extended maturation rather than a conventional age statement.
Ageing takes place in French oak barrels, whose tight-grained wood contributes layers of vanilla, aromas and flavors to the developing spirit.
The maturation cellar itself is particularly atmospheric. The barrels rest inside an ancient stone tunnel, where temperature and humidity remain naturally stable throughout the year – ideal conditions for the slow maturation of Cognac.
As the barrels and their precious contents age together, part of the spirit gradually evaporates through the pores of the wood – the famous “angel’s share.” Over time, the cellar walls and roof supports acquire the characteristic dark patina associated with long-established Cognac cellars, surrounded by the intoxicating aromas of ageing eaux-de-vie.
Perhaps that evaporated Cognac really is destined for the angels.
In the glass, Chaman displays a beautiful amber color with golden reflections.
Its aromatic intensity is almost perfume-like, while the generous vanilla character of the French oak quickly reminds you that this is very much a fine spirit.
On the palate, it is rounded and powerful, yet remarkably caressing, balancing strength with elegance.
