Edivo Winery, Croatia
At this remarkable winery, visitors literally dive into one of the wine world’s most unusual aging methods. Edivo Winery is believed to be the first winery in the world to mature some of its wines beneath the sea.
After years of research, the winery concluded that the ideal conditions for aging wine could be found on the floor of the Adriatic Sea, where cool, stable temperatures and constant underwater conditions create a unique maturation environment. Drawing inspiration from ancient methods of preserving wine and olive oil, each bottle is sealed with a special cork, protected with wax, placed inside a locally made clay amphora, and then submerged at depths of 18 to 25 meters. The amphoras remain underwater for 700 days, resting inside the wreck of an old boat.

Wine enthusiasts can experience this extraordinary process firsthand by taking a boat trip to the underwater cellar, diving to the submerged amphoras, photographing the site, and even receiving a certificate commemorating the experience. The winery also offers guided diving excursions to the historic shipwreck where its finest wines continue to mature beneath the sea.

The Wine: Navis Mysterium Undersea Bottle
This distinctive red wine is produced from Dingač grapes, a renowned variety native to Croatia’s Adriatic coast. It displays bright ruby color, refreshing acidity, and a medium-bodied structure that gains additional definition and elegance from its prolonged underwater aging.
The wine is presented in a miniature clay amphora shaped like a standard wine bottle, inspired by the large amphoras used during its two-year maturation beneath the Adriatic Sea. Each amphora emerges naturally adorned with shells, seaweed, and tiny marine organisms, making every bottle a unique collector’s item.
Its exclusivity is reflected in the price: €700—one euro for each day the wine spent aging beneath the sea.
